Healthy Ginger and Turmeric Cookies

INGREDIENTS


1 ripe banana mashed

60g coconut oil melted

50g honey (I have also substituted agave or date syrup)

1 tbsp chia seeds

1 tbsp almond butter

60g ground almonds

100g gluten free oats

50g mixed seeds (I use whatever combination of sunflower, pumpkin, linseeds, sesame I can find in the cupboard)

1 tsp cinnamon

3 tsp ground ginger

2 tsp ground turmeric

1 tsp baking powder

100g Dark chocolate to finish (optional)


METHOD


1. Heat oven to 180C fan, gas mark 4

2. Mix all the dry ingredients and spices together

3. Melt the coconut oil and mash in the banana

4. Stir in the honey, chia seeds and almond butter

5. Combine wet and dry ingredients and mix well till evenly combined

6. Shape into balls and slightly squish to flatten before placing on a lined baking tray

7. Bake for 20 minutes until golden and firm to touch

8. Leave to firm for a minute before transferring to wire rack to cool

9. Melt the chocolate slowly in a heat proof bowl over boiling water

10. While still warm, drizzle chocolate over cookies
